Black autumn truffle: It is a variety of black truffle whose scientific name is Tuber uncinatum Vitt., and which ripens between the end of September and the end of December.

The outer coat (peridium) has smaller and more accentuated pyramidal warts compared to the black summer truffle, whereas the colour of the internal part (gleba) tends to chocolate-brown with some branched whitish veins. The smell is delicate and pleasant, the flavor is intense with hazelnut and fungal notes.

It is suitable for the preparation of any dish or to enrich cheeses, meats and pasta.

How to use it: To enhance its fragrance it is advisable to grate it or to slice it raw in thin slices and to soak it brefly in some hot olive oil. It is advisable to remove it from the fridge about half an hour before use in order to make it oxygenate and let it take on its unmistakable aroma.

NOTES: 100% Italian washed and selected black autumn truffle.

The truffles have mixed size, from 15-20 g. upwards, for a total quantity of 50 g., useful for the preparation of approximately 2 servings. 

The truffles have been selected and coarsely washed. As there may be small residues of earth, it is advisable to soak them for 10/15 minutes and brush them under running water before use.

Keep the truffles in the refrigerator, wrapped in kitchen paper and placed in a plastic or glass container, replace the paper if it is damp. CONSUME WITHIN 7-10 DAYS.
