Description

White spring truffle: It is a variety of white truffle whose scientific name is Tuber Albidum Pico, which grows between the beginning of January and the end of April and which prefers sandy or clayey soils. It is a very appreciated truffle and despite its appearance vaguely recalls the white winter truffle, it has a much more affordable price than the latter.

The outer coat (peridium) is smooth and yellow-ocher, whereas the internal part (gleba) is initially whitish and tends towards reddish as it matures. Its dimensions are by nature much smaller than those of other types of truffles. The white spring truffle has a very strong character and its aroma, vaguely spicy and garlicky, goes well with fatty ingredients such as eggs, cream, milk.

How to use: It is advisable to grate it or make it into thin slices and use it in short cookings (such as in addition to risotti or pasta) or raw on hot dishes such as soups. To enhance its fragrance, it is preferable to remove it from the fridge about half an hour before use.

The truffles have mixed size, from 5 g. upwards, for a total quantity of 100 g., useful for the preparation of approximately 4 servings. 

The truffles have been selected but not washed. It is recommended to wash them only before use by brushing them under running water.

Keep the truffles in the refrigerator, wrapped in kitchen paper and placed in a plastic or glass container, replace the paper if it is damp. CONSUME WITHIN 5-7 DAY.
