Description
Black winter truffle: It is a variety of black truffle whose scientific name is Tuber Melanosporum Vitt., which grows between the end of November and the end of February. This truffle is extremely exposed to the severe frosts that occur in this period and which can suddenly ruin the harvest.
The outer coat (peridium) is black and wrinkled, whereas the internal part (gleba) is black tending to purplish, with some lighter veins. The smell is intense and very aromatic. The taste is vaguely sweet and is particularly suitable for the preparation of appetizers, roasts or to add in the creaming phase of first dishes.
How to use it: To enhance its fragrance, it is preferable to remove it from the fridge about half an hour before use. Then slice it into thin slices or grate it with a truffle slicer and use it raw or in low temperature cookings.

The truffles have mixed size, from 15-20 g. upwards, for a total quantity of 100 g., useful for the preparation of approximately 4 servings.
The truffles have been selected but not washed. It is advisable to wash them only before using them, leaving them in cold water for 10/15 minutes and brushing them under running water.
Keep the truffles in the refrigerator, wrapped in kitchen paper and placed in a plastic or glass container, replace the paper if it is damp. CONSUME WITHIN MAXIMUM 7 DAYS.
