Ingredients for 4 people:
700 g of fresh broad beans already shelled
- 1 onion
- Extra virgin olive oil
- Salt
- Pepper
- White truffle oil
After shelling our broad beans, we begin by finely chopping the onion and sautéing it gently in a pan with some oil, add our broad beans and sauté for a minute, adding salt. At this point we cover our broad beans with a glass of water and let them cook over a moderate heat. When they are cooked, we transfer our broad beans into a blender and blend until we reach the desired consistency, we like it a little rustic. Now we can proceed by plating our macco in a bowl, add our white truffle oil and a grind of pepper and it is ready to be served with toasted bread or accompanied by a crunchy tortilla!
